DINNER
PEPPERED SALMON
These dinner dishes are perfect for during the week or for special meals
with guests. So light and easy, they are sure to bring praise from the
most discerning palate.
For some, the love of pepper must be acquired. But once you taste the difference
between using freshly ground pepper and the canned ground pepper, you will
surely be hooked.
1 tablespoon fresh coarsely ground pepper
4 6-ounce salmon fillets, skinned
Vegetable spray
1 tablespoon sesame oil
Salt to taste
Spread the pepper on a large plate. Press each side of each fillet into
the pepper. Grind more pepper if necessary, until all the fillets have
been coated with the pepper.
Coat a wide, nonstick skillet with vegetable spray and sesame oil and place
over medium-high heat. Add the salmon fillets side by side, in a single
layer, and cook until golden brown on one side. Turn and season with a
little salt. Cook until golden brown on the second side, and the fish is
starting to flake and is just cooked through. Transfer to serving plates.
